BEST Gluten-Free Banana Flax Pancakes

Ingredients
  

  • 1 banana
  • 1 tablespoon vanilla extract
  • 2 tablespoon flax meal
  • 2 tablespoon coconut oil
  • 2 cups coconut milk
  • 2 teaspoon lemon juice
  • 1/2 teaspoon Pink Himalayan Salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 1/2 cups gluten-free flour

Instructions
 

  • Measure and pour all ingredients into a high-speed blender, and blend until smooth.
  • Coat a pan with coconut oil, Pour 1/4 cup batter into the pan. Wait until bubbles form before flipping the pancake with a spatula (about 3 minutes) If bubbles don't form then your pan isn't hot enough, gently turn up the heat. Flip the pancake and cook for another 2 minutes or until golden brown.
  • Serve topped with sliced bananas, walnuts, and maple syrup.
